We develop a complex array of flavors by using a blend of caramel malts balanced with a healthy addition of wheat and a touch of dark malt. This creates a full-bodied sweet, caramel beer, with buckets of hop aromas and flavors, ranging from raw mangoes, to pineapple and citrus with a touch of pine.

A large addition of coriander seed is added late in the boil, along with toasted black peppercorn and large amounts of sweet and bitter orange peel. These all culminate in a dry, but sweetly rounded beer with a pleasant amount of fruit and spice.
Our stout uses a healthy addition of tan and black jiggery, as well as carefully selected Kodagu coffee beans and a massive variety of specialty malts. Even though it is not required in the style, more than 2kg of tropical and citrus hops from NZ and the US are used, which add even more complex notes to the coffee and malt aromas and taste.

The American blonde is heavily hopped with tropical Nelson Sauvin Hops in the boil and the fermenter. With an American ale strain of yeast, this beer brings out some fruity esters to complement the NZ hops, while still being light and crisp enough session on all day.
We make this beer not just about the yeast flavors, but about the malt and the hops. We do this first by using rye to add a hint of spiciness and caramel malts to add a new layer of rich sweetness. We then dry hop with the yeast of suspension, slightly subduing the banana esters by adding notes of lemon and citrus.
Tart and floral, with the hibiscus front and center, complemented by a cranberry-like tartness and a hint of sweetness.
